Chipotle Chicken Tostadas
Prep Time: 30 minutes
Cook Time: 30 minutes
Ingredients:
1-2 lbs of boneless chicken breasts
2 Tsp of chipotle powder
2 Tbs. of roasted garlic (comes in jars you can find this at Walmart, Kroger or any local grocer)
1/2 cup of olive oil
1/2 cup of brown sugar
Tostada shells, guacamole (fresh made or store bought), cilantro, tomatoes, shredded cheese, refried beans (fresh made or store-bought)
So basically I’m just going to share the chicken recipe because the rest is pretty simple..
Take out your chicken breasts, rinse them and place them in a bowl. Poke holes all throughout the breasts with a fork. Mix the chipotle, garlic, brown sugar, and olive oil in a separate bowl then pour on top of the chicken. Massage the marinade into the chicken and make sure it’s fully coated.
Let marinate for 15-20 minutes.
Preheat oven to 350 and line a baking sheet with foil. Cook chicken for 15 minutes. Turn over and cook for 10 more minutes.
Your chicken should be juicy, and tender, sweet and spicy!
Next, just chop your veggies, heat up the beans and spread them on the tostada shells. Then add guacamole, shredded cheese, lettuce, cilantro, & tomatoes.
