Getting back to healthy eating after…..yet again some health challenges. I got this recipe from a dear friend Myrna I used to work with. I tweaked it just a bit, but it’s buttery, yummy, and healthy! Enjoy!
Prep Time: 5 Minutes
Cook Time: 45Min-1Hour
Ingredients:
1 Head of Cabbage, makes 4-5 servings
Olive Oil
1-2 Lemons
Sea Salt
Pepper
Garlic chopped, jarred, or garlic powder (optional)
Preheat oven to 400 degrees. Wash and cut your cabbage into 1 1/2 inch slices as shown. Place them on a baking sheet with foil for easy cleanup. Drizzle olive oil over the cabbage. Then sprinkle the sea salt, black pepper, and lemon juice generously over the steaks. Then sprinkle the garlic over the cabbage. Roast on one side for 30 minutes. Remove and check to make sure the cabbage is not turning black. It should lightly brown though. Turn over the steaks and roast another 20-30 minutes. Check on it after 15 minutes to make sure it doesn’t burn.
When you’re done you’ll have a fabulously healthy side dish for dinner!
