Simple Vegan Tofu Stir Fry
Prep Time: 10 Minutes, Serves 2
Ingredients:
1 Package of Firm Tofu
1 Tomato
1 Onion
1-2 Avocados
1 Bell Pepper, or add veggies of your choice, even squash or zucchini
3 Tbsp. of Salsa Valentina, you can find this in the Hispanic/International section of most grocers. (I put it on everything, it’s so delicious and not too spicy)
1 Tbsp. of Olive Oil or Earth Balance Buttery Spread
Chop all veggies, and heat your skillet on low with some olive oil or Earth Balance buttery spread.
Add onions and bell peppers to oil first and simmer 3 minutes
Then add in tomatoes
Tofu is next, and doesn’t need to cook long, just needs to be heated up a bit. You can mix it into the stir fry with the spatula if its in squares
Allow to simmer a total of 7-10 minutes making sure onion is translucent. Cook less if you don’t mind them being crunchy, after all the more raw the better
Add the Salsa Valentina and mix it with spatula.
Serve on your plate and top with avocados. If you want to make this into a tofu ranchero, just saute some corn tortillas in oil till hard before hand. Then serve the stir fry on top. Get creative and you can even add GoVeggie Cheese on top or folded in.
This is a wonderful and delicious substitute for your typical breakfast omelette!
